Pineapple Zucchini Bread

A little twist on your traditional zucchini bread!

3 eggs
1 tsp vanilla
2 c grated zucchini
1 tsp baking powder
1 c crushed pineapple, drained
1/2 c raisins (opt.)
1 1/2 c sugar
1 c oil
3 c flour
1 tsp. salt
1 tsp baking soda
1 c nuts (opt.)

Beat eggs until fluffy. Add sugar, vanilla, oil, then zucchini, flour, baking powder, salt and soda. Stir in pineapple, raisins and nuts. Bake in greased loaf pan at 350 for 40-50 minutes or until toothpick comes clean.
